Thai Green Curry Recipe



Thai Green Curry is the meal I thought I would DESPISE.

Seriously, when Brandon told me it was his favorite meal and he couldn't wait to make it for me I froze in my steps. Let us just say that curry and I have never been friends.

So we get married and he is determined to make Thai green curry. Not even a week after we marry we find ourselves in a small Asian market shopping for the ingredients and have a mocajete on the way from an online store. 

After a very laborious afternoon of grinding the spices and making the curry paste from scratch, as well as learning how to cook together, we have it made. 

Y'all. 

I could not believe what I had tasted. The richness and the FLAVOR embedded in every bite were real. Brandon was beaming when he saw that I enjoyed it and wanted more. At some point, I told him we needed to make this every week! (which is low-key very difficult if you're new to making dishes like this). We came to the conclusion to aim for at least once a month. The nutritional properties found in this meal are so good, that you can feel the common cold leave your body as you eat it. One of the ultimate comfort foods on our list.

Galangal: This root is a cousin to ginger, but not in the same field of flavor. Galangal has a wider citrus note compared to ginger. Without further ado, let's make some Thai Green Curry!


TOOLS

Dutch oven (*amazon affiliate link here)

INGREDIENTS

For the paste:

3 inches galangal

3-4 shallots

1 stalk of lemongrass

1 whole bulb of garlic

handful of kaffir lime leaves

7-10 Thai green chilis


For the spices:

4 tsp whole coriander

2 tsp white peppercorns

2 tsp cumin seeds


For the chicken:

2lbs boneless chicken thighs roughly cut


For the soup:

32oz full-fat coconut milk

16oz chicken bone broth

1 tsp shrimp paste

2 tbsp palm sugar

2-3 tbsp fish sauce

sesame oil (to coat the pan) 


For the rice:

Measure with your heart white rice


WHAT TO DO

1. In a skillet toss and toast the spices (coriander, white peppercorn, and cumin) until browned and aromatic. 

2. Finely chop all of the vegetables for the paste: galangal, shallots, garlic, thai chilis, lemongrass, and kaffir leaves.

3. In a molcajete you will pound each vegetable/root until it forms a paste. This process can take a while, so roll those sleeves up and get at it. (P.S. This is a very therapeutic thing to do). 

4. Heat the Dutch oven on the stove and add the oil. 

5. Cut chicken thighs into bite-size pieces.

6. Then add the coconut milk. You want the coconut fat to separate from the milk. 

7. When coconut milk has started to curdle, add in the curry paste and the shrimp paste.

8. Add in the fish sauce. 

*You may want to open a window, the shrimp paste and the fish sauce can definitely make things smell interesting. It doesn't last for long.

9. Add in the palm sugar.

10. Add chicken bone broth.

11. Use the immersion blender to get a smooth texture. 

10. Add chicken thighs in and let cook thoroughly. 

11. Prepare white rice.

12. When chicken is cooked all the way through, the curry is done.


Serve with rice and enjoy!
